Gin Rickey

  Long drink (collins) glass
Shake all ingredients except soda water with ice, strain over fresh ice and top with soda water
45 mls BOLS Gin
Top with Soda water
22 mls Freshly squeezed lime juice
The garnish is an entire lemon's peel, twisted so it rolls around the inside of the glass - a lemon version of the "horse's neck" garnish more commonly made with orange peel. It has become popular to make Rickeys with sugar or sugar syrup, but this is not authentic.
Rickeys are highballs made using soda water and some lime juice, and are anecdotally credited to Jim Rickey, a guest of Shoemaker's restaurant in the USA. Given that rum and lime (for vitamins) was already well-established hundreds of years ago in various navies, attributing the drink to Rickey in 1900 may not be entirely justified, but it's completely possible that a previously-named drink was named for Colonel Rickey.
